Part of this resulting dough is then saved to use as the starter the next time. It is not uncommon for a baker's starter dough to carry years of history, from many hundreds of previous batches. As a result, each bakery's sourdough has a distinct taste. Lyon uses a starter that they got from a friend decades ago.... who got it from their friend decades before that... who got it from their friend decades before that!
