Why we rescued 'em: Might see some minor cosmetic damage. Futu variety, delicious persimmons from CA! These were rejected by another produce rescue operation. The minor scarring is no problem for us though, it's what's on the inside that counts!

The delicious details: While they look like tomatoes, persimmons have a sweet honey-like taste. These are the Fuyu variety. Fuyus can be eaten hard like an apple or you can wait until they have a soft, pudding texture for maximum sweetness.
Here are 12 recipes to eat up persimmon. If the skin is light, those are for cooking, great in soups or roasted. If the skin is darker, those should be sweet enough to eat raw.
